Ingredients

  • 15 tbsp Basmati rice (washed; 3 tbsp per bowl)
  • 1.25 cup Chicken broth (1/4 cup per bowl; can substitute with water)
  • 10 tbsp Light mayonnaise (2 tbsp per bowl)
  • 10 tbsp Sweet chili sauce (2 tbsp per bowl)
  • 5 tsp Sriracha (1 tsp per bowl; adjust to taste)
  • 25 oz Boneless skinless chicken breast (cut into bite-sized pieces)
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 2 tsp Chili powder
  • 1 tsp Salt
  • 1 tsp Black pepper
  • Spicy mayo sauce (for topping; optional)
  • Fresh avocado (for topping on the day of serving; optional)

Steps

  1. 1

Preheat your oven to 350°F (175°C).

  2. 2

Wash the basmati rice thoroughly. Place 3 tablespoons of the washed rice into each of the five oven-safe meal prep containers.

  3. 3

Add 1/4 cup of chicken broth (or water) to each container.

  4. 4

Add 2 tablespoons of light mayonnaise, 2 tablespoons of sweet chili sauce, and 1 teaspoon of sriracha to each container.

  5. 5

Stir the rice, broth, and sauces together in each container using a fork until well combined.

  6. 6

Season the 25 ounces of chicken breast with 2 teaspoons garlic powder, 2 teaspoons onion powder, 2 teaspoons chili powder, 1 teaspoon salt, and 1 teaspoon black pepper. Mix well to ensure the chicken is evenly coated.

  7. 7

Distribute the seasoned chicken evenly across the five containers, placing it on top of the rice mixture.

  8. 8

Place the containers in the oven and bake for 40 minutes, or until the chicken reaches an internal temperature of 165°F and the rice is tender.

  9. 9

Remove from the oven and top with extra spicy mayo sauce if desired.

  10. 10

Let the bakes cool for about 15 minutes before covering with lids and storing in the refrigerator.
