Ingredients
- 2 kg skinless boneless chicken thighs (cut into bite-sized pieces)
- 10 g salt
- 5 g black pepper (for seasoning chicken)
- 1.25 L Coca-Cola Zero
- 200 g soy sauce
- 40 g oyster sauce
- 60 g garlic (minced)
- 30 g ginger paste
- 5 g MSG
- 5 g black pepper (for sauce)
- 20 g cornstarch (mixed with 40g water for slurry)
- 30 g rice vinegar
- 1.5 kg white rice (cooked)
- 1 cauliflower (large head)
- onions (quantity not specified in list but used in instructions; suggest 1-2 medium onions)
Steps
- 1
Cut the chicken thighs into bite-sized pieces and season them thoroughly with 10g salt and 5g black pepper.
- 2
Heat a large pan or wok over high heat. Add the chicken and cook until well browned. The rendered fat from the chicken thighs should be sufficient, so no additional cooking oil is required.
- 3
Add the onions to the pan and cook for 2–3 minutes until they have softened.
- 4
Pour in the 1.25 L of Coca-Cola Zero. Bring to a simmer over medium-high heat and let it cook for 15–20 minutes until the liquid has reduced by approximately half.
- 5
While the chicken and cola are simmering, prepare the 1.5kg of white rice.
- 6
Stir in the soy sauce, oyster sauce, minced garlic, ginger paste, MSG, and the remaining 5g of black pepper.
- 7
Continue simmering the mixture until the sauce becomes glossy and coats the chicken.
- 8
Remove the chicken from the pan to prevent overcooking and set aside. Add the cauliflower (cut into florets) to the sauce.
- 9
Whisk the 20g cornstarch with 40g water to create a slurry. Add the slurry to the pan and cook for another minute until the sauce is lightly thickened.
- 10
Stir in the rice vinegar at the very end to balance the sweetness of the cola.
Notes
The author notes that no additional oil is needed because the chicken thighs render enough fat. The rice vinegar is a critical finishing touch to cut through the sweetness of the reduced soda.
