Ted Lasso Biscuits
Inspired by the hit show, these buttery shortbread biscuits are flaky, tender, and rich. They are traditionally served in a pink pastry box and paired with 'hot brown water' (tea).

Ingredients
- 1 cup unsalted butter (softened to 65 to 67ºF (18 to 19ºC); Kerrygold or European-style recommended)
- 0.66 cup granulated sugar (plus more for sprinkling)
- 1 tsp vanilla extract
- 0.75 tsp kosher salt (or sea salt)
- 2 cup all-purpose flour

Set the oven rack to the middle position and preheat the oven to 325ºF (165ºC).

Line an 8x8-inch baking pan with parchment paper, ensuring there is a 1-inch overhang on each side for easy removal later.

Using a stand mixer or hand mixer fitted with a paddle attachment, combine the softened butter, granulated sugar, vanilla extract, and salt on low speed.

Increase the mixer speed to medium and mix until the mixture is light, creamy, and aerated, about 2 minutes. Scrape down the sides of the bowl as needed.

Add the all-purpose flour and mix on low speed just until a hydrated and crumbly dough is formed. Do not overmix.

Transfer the dough to the prepared baking pan and lightly press it down until it evenly fills the pan.

Place a piece of plastic wrap on top of the dough and use the bottom of a spatula to flatten the surface into a smooth, even layer.

Remove the plastic wrap and use a fork to lightly prick the surface of the dough about 36 times, evenly spaced.

Cover the pan and refrigerate for 30 minutes to chill the butter (or freeze for 15 minutes).

Bake until the surface and edges are golden brown, about 30 to 35 minutes.

Cool the pan on a wire rack for exactly 5 minutes.

While the biscuits are still hot, use a sharp knife to cut them into rectangles. For 18 pieces, cut them into approximately 2.6 by 1.3 inch rectangles.

Optionally, sprinkle about 1 tablespoon of granulated sugar (or sparkling sugar for crunch) over the surface while the biscuits are still warm to help it stick.

Let the biscuits cool completely in the pan to allow the milkfat to solidify for the proper texture.

Carefully lift the biscuits out using the parchment paper overhang. Re-slice along the previous lines if needed to separate the pieces before serving.
