Thai Coconut Shrimp Soup

Ingredients
- 1 cup Jasmine rice (rinsed)
- 2 cup Water (for cooking rice)
- 1 tsp Vegetable oil (for rice water)
- Salt (to taste)
- 2 tbsp Butter
- 2 tbsp White cooking wine (estimated quantity)
- 18 Medium shrimp (peeled and deveined)
- 1 Garlic cloves (minced)
- 1 cup Onion (diced)

- 1 tbsp Fresh ginger (minced or grated)
- 1 cup Vegetable stock
- 14 oz Unsweetened coconut milk (1 can)
- 1 tbsp Curry powder
- 1 Lime (juiced)

Prepare the jasmine rice by adding salt, a little oil, and the rice to boiling water. Bring back to a complete boil, then turn the heat down to low, cover, and simmer until the water is absorbed and rice is tender.

In a separate saucepan, melt 2 tablespoons of butter over medium heat.

Add a splash of white cooking wine to the melted butter.

Add the 18 medium-sized shrimp to the saucepan and cook for a few minutes until they turn pink. Remove the shrimp from the pan and set aside.

In a large pot or the same saucepan (if large enough), begin the broth by adding the diced onions and minced garlic. Season with salt and pepper to taste.

Sauté the onions and garlic for about 3 to 4 minutes until the onions are softened.

Add the minced ginger to the pot and stir for about 1 minute until it becomes fragrant.

Pour in 1 cup of vegetable stock and the can of unsweetened coconut milk. Stir together and bring the mixture to a boil.

Once boiling, add 1 tablespoon of curry powder and the juice of one lime. Stir well and continue to cook at a boil for about 4 more minutes.

Add the cooked shrimp back into the coconut broth and stir to combine.

Bring the soup back up to temperature, ensuring the shrimp are heated through.
