Ingredients

  • 3 Honeycrisp apples (peeled and cut into 1-inch slices)
  • 0.5 cup brown sugar (packed)
  • 0.25 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (part of the 'bunch of spices')
  • 0.25 tsp nutmeg (part of the 'bunch of spices')
  • 1 tbsp lemon juice
  • salt (a pinch)
  • 1 tbsp all-purpose flour (for the apple filling)
  • 1 cup all-purpose flour (for the topping)
  • 0.5 cup granulated sugar (for the topping)
  • 1 tsp baking powder (standard for cake-like topping)
  • 0.5 cup unsalted butter (melted)
  • 0.5 cup milk (to create the pancake-like batter)

Steps

  1. 1

Preheat your oven to 375°F (190°C).

  2. 2

Peel the Honeycrisp apples and cut them into approximately one-inch thick slices.

  3. 3

In a large bowl, toss the sliced apples with brown sugar, white sugar, vanilla extract, cinnamon, nutmeg, lemon juice, a pinch of salt, and a tablespoon of flour until the apples are evenly coated.

  4. 4

Transfer the apple mixture into a baking dish, spreading them out into an even layer.

  5. 5

In a separate bowl, prepare the topping by whisking together flour, sugar, and baking powder. Stir in the melted butter and milk until a soft, pancake-like batter forms.

  6. 6

Spoon the batter over the top of the apples, spreading it gently to cover most of the fruit.

  7. 7

Bake in the preheated oven for 40-45 minutes, or until the apple filling is bubbling and the cake topping is golden brown and cooked through.

  8. 8

Remove from the oven and let rest for a few minutes before serving warm, ideally with a scoop of vanilla ice cream.

Notes

The author recommends Honeycrisp apples for their availability and flavor. The topping is described as a cross between a pancake and a buttery cake.
