Ingredients

  • 2 chicken breasts (large, pounded thin)
  • 1 cup flour (for dredging)
  • 2 eggs (for egg wash)
  • 1.5 cups breadcrumbs
  • 1.5 cups Parmesan cheese (freshly shredded, divided)
  • 2 tbsp parsley (chopped, for breading)
  • 4 tbsp lemon pepper seasoning (divided)

  • 1 lb fettuccine
  • 2 tbsp olive oil
  • 6 tbsp garlic butter (divided)
  • 1 head roasted garlic
  • 2 cups heavy cream
  • 1 cup pasta water (reserved from boiling fettuccine)
  • 1 tsp red pepper flakes
  • black pepper (to taste)
  • 0.5 cup honey
  • 1 lemon (juiced)
  • parsley (fresh, for garnish and sauce)

    Pound the chicken breasts thin to ensure even cooking.

    Prepare the breading station: place flour in one bowl, beaten eggs in a second bowl, and a mixture of breadcrumbs, 1.5 cups of Parmesan, 2 tbsp parsley, and a generous amount of lemon pepper seasoning in a third bowl.

    Coat each chicken breast first in flour, then dip into the egg wash, and finally press into the breadcrumb mixture until fully coated.

Notes

To roast garlic: Cut the top off a head of garlic, drizzle with olive oil, wrap in foil, and bake at 400°F (200°C) for about 40 minutes until soft and golden.
