Ingredients

  • 1 packet instant jasmine rice (microwaved according to package instructions)
  • 1 tsp sesame oil (a dash)
  • 1 tsp soy sauce (a dash)
  • 2 tbsp chili crisp (two spoonfuls; divided use)
  • 0.5 lb chicken tenders (cooked in air fryer and chopped into bite-sized pieces)
  • 0.5 cup mayonnaise
  • 0.25 cup sweet chili sauce
  • sriracha (to taste)
  • 0.5 lime lime juice (freshly squeezed)
  • 2 cup iceberg lettuce (shredded)
  • 0.5 cup carrots (grated)
  • 0.5 English cucumber (cut into thin slices)
  • 0.25 red onion (thinly sliced)
  • 1 avocado (sliced)

Steps

  1. 1

Preheat your oven to 425°F (220°C).

  2. 2

Prepare the instant jasmine rice according to the package instructions (typically by microwaving).

  3. 3

In a bowl, combine the cooked rice with a dash of sesame oil, a dash of soy sauce, and two spoonfuls of chili crisp. Mix thoroughly until the rice is well coated.

  4. 4

Spread the seasoned rice in an even layer on a 9x13 inch baking sheet.

  5. 5

Bake the rice in the preheated oven for 20 to 25 minutes, stirring halfway through, until it is nice and crispy.

  6. 6

While the rice bakes, cook the chicken tenders in an air fryer until fully cooked and crispy. Once done, chop the chicken into bite-sized pieces.

  7. 7

Prepare the bang bang sauce by whisking together 1/2 cup mayonnaise, 1/4 cup sweet chili sauce, sriracha to taste, and the juice of half a lime. Taste and adjust seasoning as needed.

  8. 8

Toss the chopped chicken pieces with a little bit of extra chili crisp or chili sauce for flavor.

  9. 9

Assemble the bowls by starting with a base of shredded iceberg lettuce.

  10. 10

Add the grated carrots, sliced English cucumber, thinly sliced red onion, and sliced avocado to the bowls.

  11. 11

Add a portion of the crispy rice and the seasoned chicken to each bowl.

  12. 12

Drizzle the bang bang sauce generously over the top before serving.

Notes

You can substitute the chicken for popcorn shrimp if preferred. The creator suggests using a larger bowl than shown in the video to make mixing easier.
