Ingredients
- 4 broccoli crowns (Small crowns)
- 3 eggs (Lightly beaten)
- 5 tbsp almond flour
- 0.333 cup mozzarella (Shredded)
- 3 oz feta cheese (Crumbled)
- 2 garlic (Cloves, minced)
- 3 tbsp dill (Chopped)
- 1 tsp onion powder
- 0.5 tsp chili pepper flakes
- salt (To taste)
- black pepper (To taste)
- 2.5 tbsp olive oil (For cooking)
Steps
- 1
Steam the broccoli crowns in about 1 inch of water for 7 minutes, or until fork-tender.
- 2
Remove the steamed broccoli to paper towels and allow it to cool slightly. Pat it dry thoroughly with the towels so the fritter mixture is not excessively wet.
- 3
Chop the broccoli into very small pieces.
- 4
Lightly beat the eggs in a large bowl.
- 5
Add the chopped broccoli, almond flour, shredded mozzarella, crumbled feta, minced garlic, chopped dill, onion powder, chili pepper flakes, salt, and pepper to the bowl with the eggs.
- 6
Mix everything until well incorporated.
- 7
Form the mixture into large balls.
- 8
Heat 2–3 tablespoons of olive oil in a large skillet until hot.
- 9
Add the broccoli balls to the skillet and flatten each one slightly.
- 10
Lower the heat to medium and cook the fritters for 6 minutes.
- 11
Flip the fritters, then flatten them again with the back of a spatula.
- 12
Cook for another 6 minutes. If the fritters are becoming too dark brown, lower the heat. They should be golden brown when finished.
- 13
Serve and enjoy, optionally with lazy tzatziki dip.
Notes
The source lists lazy tzatziki as an optional dip but does not provide a recipe for it. The amount of olive oil is given as a range; nutrition uses the midpoint of 2–3 tablespoons.
