Ingredients

  • 0.5 cup peanut butter
  • 3 tbsp butter (softened)
  • 1 tsp vanilla extract
  • 1 cup Rice Krispies cereal
  • 0.5 cup pecans (chopped)
  • 1 cup shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 4 oz sweet baking chocolate (chopped)
  • sprinkles (optional garnish)

    In a large bowl, thoroughly mix the peanut butter, 3 tablespoons of softened butter, 1 teaspoon of vanilla extract, 1 cup of Rice Krispies, 1/2 cup of chopped pecans, and 1 cup of shredded coconut until fully combined.

    Cover the bowl and place the mixture in the refrigerator to chill for 30 minutes so it firms up.

    Roll the chilled mixture into bite-sized balls and place them on a parchment-lined baking sheet.

    Return the balls to the refrigerator to chill for 1 hour.

    In a microwave-safe bowl, combine 1 cup of semi-sweet chocolate chips and 4 ounces of chopped sweet baking chocolate.

    Melt the chocolate in the microwave in 30-second intervals, stirring well after each interval until completely smooth.

    Dip each chilled ball into the melted chocolate to coat it evenly, allowing any excess to drip off.

Notes

Practical tip: Keep the rolled balls in the refrigerator right up until dipping; if they warm up to room temperature, they may soften and fall apart in the warm melted chocolate.
