Ingredients
- 1 cup cottage cheese (full-fat preferred)
- 0.25 cup warm water (about 110°F/45°C)
- 1 tbsp honey
- 2.25 tsp active dry yeast (1 standard packet)
- 1 egg (large, room temperature)
- 3 cup all-purpose flour (plus more for dusting)
- 1.5 tsp kosher salt
- 2 tbsp unsalted butter (melted and cooled)

In a large bowl, combine the cottage cheese, warm water, honey, and yeast. Whisk until the yeast is dissolved and the mixture is slightly bubbly.

Add the egg and melted butter to the cottage cheese mixture. Whisk until well combined.

In a separate bowl, whisk together the flour and salt.

Gradually add the dry ingredients to the wet ingredients. Stir with a wooden spoon or spatula until a shaggy dough forms and no dry flour remains.

Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm, draft-free spot for about 1 to 1.5 hours, or until doubled in size.

Preheat your oven to 375°F (190°C). Grease a 9x5-inch loaf pan with butter or non-stick spray.

Gently deflate the dough and transfer it to the prepared loaf pan, smoothing the top with a spatula.

Cover the pan and let the dough rise again for about 30-45 minutes, until it has risen about 1 inch above the rim of the pan.

Bake for 35 to 45 minutes, or until the top is deep golden brown and the loaf sounds hollow when tapped. The internal temperature should reach 190°F (88°C).

Remove from the oven and let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a smoother texture, you can blend the cottage cheese with the water and honey before adding the yeast. This bread makes excellent French toast the next day. Store in an airtight container at room temperature for up to 3 days.
