Ingredients

  • 4 oz linguine pasta
  • 2 boneless, skinless chicken breast halves (sliced into thin strips)
  • 2 tsp Cajun seasoning
  • 2 tbsp butter
  • 1 green bell pepper (chopped)
  • 0.5 red bell pepper (chopped)
  • 4 fresh mushrooms (sliced)
  • 1 green onion (minced)
  • 1.5 cup heavy cream
  • 0.25 tsp dried basil
  • 0.25 tsp lemon pepper
  • 0.25 tsp salt
  • 0.125 tsp garlic powder
  • 0.125 tsp ground black pepper
  • 2 tbsp grated Parmesan cheese

Steps

  1. 1

Bring a large pot of lightly salted water to a boil.

  2. 2

Add linguini pasta to the boiling water and cook for 8 to 10 minutes, or until al dente; drain.

  3. 3

Meanwhile, place chicken strips and Cajun seasoning in a bowl and toss until the chicken is evenly coated.

  4. 4

In a large skillet over medium heat, melt the butter and saute the seasoned chicken until it is no longer pink and the juices run clear, about 5 to 7 minutes.

  5. 5

Add the chopped green and red bell peppers, sliced mushrooms, and minced green onions to the skillet; cook for 2 to 3 minutes.

  6. 6

Reduce the heat to low and stir in the heavy cream.

  7. 7

Season the sauce with dried basil, lemon pepper, salt, garlic powder, and ground black pepper; heat through until the sauce is warm and slightly thickened.

  8. 8

In a large bowl, toss the cooked linguini with the creamy Cajun sauce.

  9. 9

Sprinkle with grated Parmesan cheese before serving.

Notes

Try serving this dish with corn bread. For a bolder flavor, some reviewers suggest adding extra Cajun seasoning. You can also experiment with adding other vegetables to the mix.
