- 1 cup all-purpose flour (sifted)
- 2 tsp baking powder
- 2 tbsp granulated sugar
- 0.25 tsp salt
- 0.875 cup whole milk (3/4 cup plus 2 tbsp)
- 1 large egg (beaten)
- 2 tbsp unsalted butter (melted and slightly cooled)
- 1 tsp pure vanilla extract
- canola or vegetable oil (for cooking)

Whisk the sifted flour, baking powder, sugar, and salt together in a large bowl.

In a separate bowl, whisk the milk, beaten egg, melted butter, and vanilla until combined.

Pour the wet mixture into the dry ingredients.

Fold gently just until no large dry streaks remain. A few small lumps are fine; do not overmix.

Let the batter rest undisturbed for 5–10 minutes. If it seems too thick to pour, gently fold in 1–2 additional tablespoons of milk.

Lightly coat a nonstick skillet or griddle with oil and heat over medium-low to medium heat.
