  • 350 g Bread flour
  • 227 g Water
  • 9 g Fine salt
  • 2.5 g Instant yeast
  • 7.5 g Olive oil
  • 5 g Granulated sugar
  • 4 cup Low-moisture mozzarella cheese (Shredded; use about 1 cup per roll)
  • 0.5 cup Grated Parmesan cheese
  • 2 tsp Dried parsley
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 2 tbsp Heavy cream (For brushing the rolls before coating)
  • Cooking spray (For the sheet tray and plastic wrap)

    Add the water, granulated sugar, and instant yeast to the bowl of a stand mixer. Stir briefly and let the mixture stand for 5–10 minutes, until the yeast is active and foamy.
