Beef Kefta Meatloaf

Ingredients
- 10 oz Ground Beef
- 1 Romaine Heart (coarsely chopped)
- 1 Roma Tomato (cored and cut into 1/2 inch dice)
- 1 Persian Cucumber (trimmed and cut into 1/4 inch dice)
- 2 oz Tzatziki Cup
- 1.5 oz Greek Feta Dressing
- 1 oz Crumbled Feta Cheese (divided)
- 4 Green Onions (thinly sliced on an angle, white and green portions separated)
- 0.3 oz Panko Breadcrumbs
- 1 tsp Chimichurri Seasoning
- 0.5 tsp Salt (divided)
- Black Pepper (to taste)
- 1 tsp Olive Oil
- Cooking Spray

Preheat oven to 400 degrees Fahrenheit. Prepare a baking sheet by lining it with foil and spraying with cooking spray.

Prepare the produce: Hold the romaine heart at the root end and chop coarsely. Trim the cucumber and cut into 1/4" dice. Core the tomato and cut into 1/2" dice. Trim and thinly slice green onions on an angle, keeping white and green portions separate.

In a mixing bowl, thoroughly combine the ground beef, white portions of the green onions, panko breadcrumbs, chimichurri seasoning, and 1/4 tsp. salt.

Form the beef mixture into two equally-sized, oval-shaped loaves, approximately 3" in length and 2" in height.

Place the meatloaves on the prepared baking sheet and drizzle with 1 tsp. olive oil.

Roast in the hot oven until the beef reaches a minimum internal temperature of 160 degrees, about 20-25 minutes.

While the meatloaves roast, assemble the salad. In another mixing bowl, combine the chopped romaine, diced tomatoes, diced cucumbers, half the feta cheese (reserve the remaining half for garnish), the Greek feta dressing, 1/4 tsp. salt, and a pinch of pepper. Gently toss to coat and set aside.

Plate the dish by serving the meatloaves alongside the salad. Top each meatloaf with the tzatziki, the remaining feta cheese, and the green portions of the green onions.
Notes
If using ground turkey instead of beef, roast until the loaves reach a minimum internal temperature of 165 degrees, approximately 20-25 minutes.
