Caramelized Banana Affogato Syrup

Ingredients
- 2 ripe bananas (Peeled)
- 2 tbsp butter
- 1 cup brown sugar
- 1 cup water
- 1 tbsp vanilla extract (Add after blending and cooling)

Peel the bananas and place them in a saucepan with the butter. Set the pan over medium heat.

Cook the bananas and butter for about 5 minutes, stirring and mashing until the bananas become very soft and mushy and the butter is fully melted.

Add the brown sugar to the banana mixture. Stir to combine, reduce the heat to low, and simmer for about 5 minutes, stirring occasionally, until the sugar is dissolved and the mixture is glossy.

Add the water and stir thoroughly to loosen the syrup.

Simmer the mixture over low heat for another 10 minutes, stirring occasionally, until the bananas are completely softened and the syrup is slightly thickened.

Carefully transfer the hot mixture to a blender, or use an immersion blender in the saucepan. Blend until smooth and uniform.
