Ingredients

  • 1.2 lb minced chicken (use fresh, not defrosted)
  • 1 red onion (medium, finely grated and squeezed dry)
  • 1 red bell pepper (finely grated and squeezed dry)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp sour cream (can also use Greek yogurt 18%)
  • 1.5 tsp smoked paprika
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp coriander
  • 0.5 tsp black pepper
  • chili flakes (adjust to taste)
  • 1.5 tsp salt (adjust to taste (1-2 tsp))
  • 2.5 garlic cloves (minced (2-3 cloves))
  • 5 large flour tortillas (author used 5 total)
  • 4 tbsp butter (for glaze)
  • 1 tbsp tomato paste (for glaze)
  • 1 tbsp chopped parsley (for glaze)
  • 0.75 tsp paprika (for glaze, adjust to taste (0.5-1 tsp))
  • 1 garlic clove (minced, for glaze)
  • 1 tsp honey (for glaze)

Steps

    In a large bowl, combine the minced chicken, grated red onion, grated red bell pepper, 2 tablespoons chopped parsley, sour cream, smoked paprika, 1 teaspoon paprika, cumin, coriander, black pepper, chili flakes, salt, and 2-3 minced garlic cloves. Mix until just combined.

    Place the chicken mixture in the refrigerator to chill for 15-20 minutes.

    While the chicken chills, cut the flour tortillas into rectangles.

    Create a stack by layering a tortilla rectangle followed by a thin, even layer of the chicken mixture. Repeat this process until you have 4-5 layers of chicken, finishing with a final tortilla on top.

    Press the stack down gently to ensure the layers adhere, then chill the stack in the refrigerator for another 5-10 minutes.

    Preheat your oven to 400°F (200°C) fan setting.

    Slice the chilled layered stack into 4 even rectangles.

    Rotate each piece and carefully insert a wooden skewer through the center of the layers to hold them together. Place the skewers on a baking tray lined with parchment paper.

    While the skewers are baking, prepare the glaze: melt 4 tablespoons of butter in a small saucepan over low heat.

    Stir the tomato paste into the melted butter and cook for 30-60 seconds.

    Add the 1 tablespoon chopped parsley, paprika, minced garlic clove, chili flakes, and honey to the butter mixture to complete the spiced butter glaze.

Notes

The author suggests serving with a quick dip made of sour cream mixed with smoked paprika, chili, and salt. It is very important to squeeze the grated onion and bell pepper dry to prevent the filling from becoming too wet. The recipe can also be adapted for an air fryer.
