Peach upside down puff pastry

Ingredients
- 2 peaches (large, thinly sliced)
- 6 puff pastry squares (pre-cut or cut from a sheet)
- 3 tbsp honey (divided)
- 0.25 tsp powdered cinnamon
- 0.25 tsp ginger powder
- 1 tsp canola oil (or any neutral flavored oil for brushing)
- powdered sugar (for garnishing (optional))
Steps

Preheat the oven to 200℃ (around 400℉).

Thinly slice the peaches.

Mix cinnamon powder and ginger powder in a small bowl and keep it aside.

Line a baking tray with a baking sheet (parchment paper).

Spread around 2 teaspoons of honey on a corner of the baking sheet where the first tart will be placed.

Place peach slices on top of the honey.

Drizzle some more honey on top of the peaches.

Sprinkle some of the cinnamon and ginger powder mixture over the peaches.

Cover the peaches with a puff pastry square and gently press. Seal the edges by pressing with the tines of a fork.

Brush the top of the puff pastry with some oil.

Repeat the assembly steps with all the remaining puff pastry squares and peaches.

Prick each puff pastry square at 2-3 places using a fork to allow steam to escape.

Bake in the preheated oven at 200℃ (400℉) for 18 to 20 minutes until the puff pastry turns golden brown.

Take out the baking tray and allow the tarts to reach room temperature.

Once the puff pastries reach room temperature, flip them over with the help of a spatula so the peaches are on top.

Sprinkle some powdered sugar on top before serving.
Notes
Allow the baked puff pastries to reach room temperature before flipping them over, otherwise they may break. You can substitute peaches with nectarines, apples, or plums. For a different finish, use an egg wash or milk instead of oil for brushing. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
