Ingredients

  • 1 tsp ground cumin
  • 1 tsp coriander seed
  • 1 tsp ground cardamom (green)
  • 1 tsp turmeric
  • 1 tsp ground ginger
  • 1 tsp paprika powder
  • 1 tsp chili powder
  • ground nutmeg (1 pinch)
  • 1 lb chicken breasts (cut into bite-sized pieces)
  • 3 tbsp butter
  • salt (to taste)
  • 0.5 red bell pepper (sliced)
  • 1.25 cups coconut cream
  • 1 tbsp fresh parsley (chopped, for garnish)

Steps

  1. 1

In a small bowl, mix together the ground cumin, coriander seed, ground cardamom, turmeric, ground ginger, paprika powder, chili powder, and nutmeg to create the garam masala spice blend.

  2. 2

Cut the chicken breasts into bite-sized pieces and season them with salt and a portion of the prepared spice mix.

  3. 3

Heat the butter in a large skillet or pan over medium-high heat.

  4. 4

Add the chicken pieces to the skillet and sauté until they are browned on all sides and cooked through.

  5. 5

Add the sliced red bell pepper and the remaining spice mix to the pan. Sauté for a few minutes until the peppers begin to soften.

  6. 6

Pour in the coconut cream and stir well to combine. Lower the heat and let the sauce simmer for 5-10 minutes until it has thickened slightly and the flavors have melded.

  7. 7

Garnish with fresh parsley before serving.

Notes

For a thicker sauce, ensure you use coconut cream rather than coconut milk. If you cannot find coconut cream, you can use the thick part at the top of a chilled can of full-fat coconut milk. Some users suggest substituting the bell peppers with sautéed onions for a different flavor profile. Serve over cauliflower rice for a complete keto meal.
