Ingredients

  • 1 onion (finely diced)
  • 1 carrot (finely diced)
  • 1 stick celery (finely diced; optional)
  • 2 tbsp olive oil
  • salt (a pinch, plus more as needed)
  • garlic (loosely chopped)
  • 2 chorizo or other sausage (diced; use any sausage desired)
  • smoked paprika (a little bit)
  • black pepper (a little, to taste)
  • 120 g Arborio rice (not soaked)
  • 500 ml chicken stock (water may be substituted)
  • spinach (a big handful)

Steps

  1. 1

Finely dice the onion, carrot, and celery. The celery is optional; omit it if you do not have any.

  2. 2

Heat a lidded pot over medium heat and add the olive oil.

  3. 3

Add the diced onion, carrot, and celery. Season with a pinch of salt and sauté for a couple of minutes.

  4. 4

Add the loosely chopped garlic and continue cooking briefly with the vegetables.

  5. 5

While the vegetables cook, dice the chorizo or other sausage. Add it to the pot and cook it with the vegetables.

  6. 6

Add the smoked paprika, another pinch of salt, and pepper.

  7. 7

Add the Arborio rice and mix everything thoroughly so the rice begins to toast.

  8. 8

Pour in the chicken stock, or use water if chicken stock is unavailable.

  9. 9

Bring the mixture to a light simmer. Cover the pot with its lid, reduce the heat to the lowest setting, and cook for 20 minutes.

  10. 10

Remove the lid and turn the heat back up to high.

  11. 11

Add a big handful of spinach and cover the pot again for 60 seconds.

  12. 12

Stir the spinach through the rice and sausage.

  13. 13

Reduce the heat back to low and cook for another 60 seconds.

Notes

The source does not specify the exact amount of garlic, smoked paprika, pepper, or spinach, using descriptive amounts instead. It also does not state the sausage weight or a precise serving yield. Celery may be omitted, and water may replace chicken stock.
