Ingredients

  • 1 tbsp active dry yeast
  • 2 tbsp granulated sugar
  • 1.5 cup hot water (see notes for temperature tip)
  • 2 tbsp butter (softened)
  • 1 tsp table salt (regular iodized salt)
  • 3.5 cup all-purpose flour (3-4 cups total; use enough until dough pulls away from bowl)
  • 3 tbsp butter (melted; for brushing)
  • sea salt or kosher salt (optional, for sprinkling on top)

Steps

    Prepare a 9x13 baking dish by spraying with cooking spray or lining with parchment paper. Set aside.

    In the bowl of a stand mixer, add the yeast and sugar. Stir together to combine.

    Pour the hot water over the yeast and sugar and stir. Let this sit for 5 minutes. At the end of the time, the mixture should be frothy and bubbly looking.

    Add the softened butter, table salt, and 3 cups of flour. Mix on medium-low speed, using the dough hook, until combined.

    Add additional flour, 1/4 cup at a time, until the dough pulls away from the sides of the bowl. The dough should still be slightly sticky and soft. Be sure to not add too much flour!

    Knead for 5 minutes with the dough hook on low-medium speed until the dough looks smooth.

    Cover the bowl with a dry kitchen towel and let the dough rise for 20 minutes.

    Gently punch down the dough and divide into 20 pieces (each piece will be a bit larger than a golf ball).

    Roll each piece into a ball and place into the prepared baking dish.

    Brush the rolls with some of the melted butter and sprinkle with sea salt if desired. Save some melted butter to brush on after baking.

    Let the rolls rise, uncovered, for 15 minutes.

    While the rolls are rising, preheat your oven to 400°F (200°C).

    Bake the rolls for 15-18 minutes or until the tops are golden brown. Serve warm!

Notes

Water Temperature: A helpful trick is to turn your kitchen faucet all the way to hot and use that water immediately. If the water is too hot, it kills the yeast; if it's too cold, it won't activate. If the mixture isn't frothy after 5 minutes, start over. Appearance: These rolls are known for being soft and fluffy rather than deeply browned, so they may appear pale in color even when fully cooked.
