Simple chocolate clusters made with just two ingredients: chocolate and salted peanuts. By setting aside part of the chocolate and adding it later, the chocolate cools down, allowing the clusters to set outside the refrigerator.

Ingredients
Weights are estimates. Together, the ingredients weigh about 500 g before cooking, which is about 20 g per serving.
Steps
Chop the chocolate into small pieces. Divide the chocolate into two portions: approximately two-thirds for melting and one-third to set aside.
Melt approximately two-thirds of the chopped chocolate in a double boiler or in the microwave until the chocolate is just completely melted.
Remove the bowl of melted chocolate from the heat. Add the reserved one-third of the chopped chocolate.
Stir the chocolate very gently until all the pieces have melted. This lowers the temperature of the chocolate. If desired, measure it with a digital kitchen thermometer: dark chocolate is ideal at 31–32 °C (88–90 °F), and milk or white chocolate at 30–31 °C (86–88 °F).
Add all the salted peanuts to the melted chocolate at once. Stir gently until the peanuts are evenly coated with chocolate.
Prepare a sheet of parchment paper, plastic wrap, or aluminum foil. Spoon small mounds of the chocolate-peanut mixture onto the surface; if desired, use a smaller spoon to shape the mounds more easily.
Allow the peanut clusters to set in a cool place indoors. The ideal ambient temperature for chocolate is approximately 12–16 °C; in warmer weather, setting takes longer, and the clusters may need to remain there overnight, until the next day. Refrigeration is not necessary.
Notes
This recipe makes approximately 20–25 peanut clusters. The chocolate can be dark, milk, or white. In warm weather, the clusters need more time to set.
