Deep-Fried Spicy Tofu Sushi Burrito

Ingredients
- 1.5 cup sushi rice (cooked and seasoned with rice vinegar, salt, and brown sugar)
- 1 nori seaweed (full sheet)
- 150 g fava bean tofu (for the spicy 'tuna'; mixed with crushed nori, lemon, mayo, sriracha, and Old Bay seasoning)
- 0.25 cucumber (cut into thin strips)
- 0.5 avocado (sliced)
- 1 cup all-purpose flour (for the batter)
- 0.25 cup cornstarch (cornstarch)
- 0.5 tsp salt (for the batter)
- 1 tsp baking powder
- 1 cup ice-cold water (can be substituted with sparkling water)
- 1 cup panko breadcrumbs (for breading)
- vegetable oil (for frying)
- eel sauce (for serving (optionally vegan))
- spicy mayo (for serving (optionally vegan))

Prepare the spicy 'tuna' filling by mixing the crumbled fava bean tofu with crushed nori seaweed, lemon juice, mayo, sriracha, and a pinch of Old Bay seasoning to taste.

Place a sheet of nori seaweed on a sushi mat or clean surface. Spread a thick, even layer of seasoned sushi rice over the nori, leaving a small border at the top.

Place the spicy tofu filling, cucumber strips, and avocado slices in the center of the rice.

Roll the nori tightly to form a large burrito, ensuring the edges are well sealed.

In a medium bowl, prepare the batter by whisking the flour, cornstarch, salt, baking powder, and ice-cold water (or sparkling water) until a smooth mixture is obtained.

Dip the sushi burrito completely into the batter and then dredge it in the panko breadcrumbs, pressing lightly so they adhere evenly.

Heat oil in a deep fryer or deep skillet to 375°F (190°C).

Notes
Using sparkling water in the batter helps the texture become even lighter and crispier. Ensure the oil is at the correct temperature (375°F) before frying to prevent the burrito from absorbing excess oil.
