Ingredients
- 2 potatoes (peeled and chopped)
- 2 tomatoes (chopped)
- 2 tsp mustard oil
- 0.25 tsp cumin seeds
- 0.25 tsp mustard seeds
- 1 onions (chopped)
- 1 green chilli (chopped)
- ginger (finely chopped or grated)
- 0.5 tsp coriander powder
- 0.5 tsp garam masala
- 0.5 tsp red chilli powder
- 1 tsp salt (adjust to taste)
- 1 medium glass water
- fresh green coriander (chopped, for garnish)

Heat the mustard oil in a pressure cooker over medium heat.

Add cumin seeds and mustard seeds to the oil; let them sizzle for about 2 minutes.

Add the chopped onions, green chilli, and ginger. Sauté for 3 minutes until the onions are translucent.

Add the chopped tomatoes and potatoes to the cooker.

Stir in the salt, coriander powder, garam masala, and red chilli powder. Cook for 2 minutes to allow the spices to coat the vegetables.

Pour in the water, close the pressure cooker lid, and cook for 2-3 whistles.

Release the pressure, open the cooker, and garnish with fresh chopped green coriander before serving.
Notes
Serve hot with steamed rice or chapati. Ensure the mustard oil is heated until it reaches its smoking point to remove the raw pungency before adding the seeds.
