Ingredients
- 6 chicken breast halves (boneless and skinless)
- salt (to taste)
- pepper (to taste)
- 0.25 cup olive oil
- 2 garlic (minced)
- 0.5 tsp paprika
- 0.5 cup dry Italian bread crumbs
- 0.5 cup panko
- 0.66 cup Parmesan cheese (fresh grated)
- 1 tsp dried basil leaves
- 1 tsp dried oregano
- 0.5 tsp onion powder
- 0.25 tsp ground black pepper

Lightly grease a 9x13 inch baking dish.

Season chicken breasts liberally with salt and pepper on both sides. Set aside.

In a pie tin or shallow dish, mix together the bread crumbs, panko, Parmesan cheese, basil, oregano, onion powder, and pepper.

In a separate pie tin, mix together the olive oil, minced garlic, and paprika.

Dip each chicken breast in the oil mixture, ensuring it is coated.

Dip the oiled chicken into the bread crumb mixture. Press the bread crumbs onto the chicken so each breast is coated fully.

Arrange the coated chicken breasts in the prepared baking dish.

Top the chicken with any remaining bread crumb mixture and oil.

Bake 30-35 minutes in the preheated oven, until internal temperature of the chicken reaches 165 degrees F, or until chicken is no longer pink and juices run clear.
Notes
For extra juicy chicken, the author suggests brining the chicken for 5 minutes before seasoning (using a ratio of 1 quart water to 1/4 cup salt). Do not substitute Italian blend cheese for the Parmesan if possible, as the lower moisture content of Parmesan helps achieve a crispier crust.
