Weights are estimates. Together, the ingredients weigh about 1.21 kg before cooking, which is about 75 g per serving.
Steps
Preheat the oven to 350°F (180 °C). Line a 1-pound loaf pan with parchment paper on all sides and set it aside.
Make the cinnamon apples by combining the cubed apples, 2 tablespoons packed dark brown sugar, and 1 teaspoon ground cinnamon in a small bowl. Toss to combine, then set aside.
Make the cinnamon sugar by combining the 1/3 cup packed dark brown sugar and 2 teaspoons ground cinnamon in a small bowl. Stir to combine, then set aside.
Using a stand mixer fitted with the paddle attachment, beat the room-temperature butter and granulated sugar on medium speed until light and fluffy.
Scrape down the sides of the mixing bowl with a silicone spatula. Add the eggs one at a time, beating on low speed and scraping down the bowl between additions. Add 1 teaspoon vanilla extract and mix well.
In a separate bowl, whisk together the flour, baking powder, and 1/2 teaspoon salt.
With the mixer on low speed, add half of the dry ingredients and mix slightly. Add the milk and sour cream or Greek yogurt and mix slightly. Add the remaining dry ingredients and mix just until combined and no streaks of flour remain; do not overmix.
Transfer half of the batter to the prepared loaf pan and spread it into an even layer.
Top the batter with half of the cinnamon apples and sprinkle with half of the cinnamon-sugar mixture.
Spoon the remaining batter over the apples and use a silicone spatula to spread it into an even layer.
Top with the remaining cinnamon apples and cinnamon-sugar mixture.
Bake for 50 to 55 minutes, until the loaf is golden brown all over and a butter knife inserted into the center comes out clean. Let the loaf cool.
While the loaf cools, make the glaze by whisking the powdered sugar, 1 tablespoon milk, 1/4 teaspoon vanilla extract, and a pinch of salt in a small bowl until smooth.
Once the loaf is cool, drizzle it with the glaze and serve.
Notes
The source recommends dark brown sugar for a deeper caramel flavor, though light brown sugar can be used in a pinch. Avoid overmixing after adding the flour. Store the covered bread tightly in the refrigerator; reheat individual slices in the microwave or oven if desired. The source does not specify an exact cooling time.
