Stuffed Onions with Egg Yolk, Truffle, and Grana Padano

Ingredients
- 2 large white onions (skins left on for roasting)
- 2 cup coarse sea salt (for roasting bed)
- 0.5 cup heavy cream (for the onion purée)
- 50 g Grana Padano PDO cheese (finely grated, plus extra for shaving)
- 2 egg yolks (separated from whites)
- black truffle (freshly shaved or preserved flakes; optional)
- salt and black pepper (to taste)

Preheat your oven to 400°F (200°C). Fill a small baking dish with a thick layer of coarse sea salt.

Place the whole onions (with skins on) onto the salt bed. Bake for approximately 45-60 minutes until the onions are completely soft and tender to the touch.

Remove the onions from the oven and let them cool slightly. Carefully slice off the top third of each onion. Use a spoon to scoop out the softened centers, leaving the outer 2-3 layers intact to form a bowl.

Place the scooped-out onion centers into a blender or food processor. Add the heavy cream and grated Grana Padano cheese. Blend until completely smooth and creamy.

Season the onion cream with salt and pepper to taste. If the mixture has cooled, gently reheat it in a small saucepan.

Place the hollowed-out onion shells back into the baking dish or onto a serving plate. Fill each shell halfway with the warm onion cream.

Carefully place one raw egg yolk into the center of each onion, resting it on top of the cream.

Top the yolk with more onion cream until the onion shell is nearly full.

Finish the dish by shaving fresh black truffle and additional Grana Padano cheese over the top. Serve immediately while the cream is hot and the yolk is runny.
Notes
The salt bed helps distribute heat evenly and draws out moisture for a sweeter roasted onion flavor. If you don't have truffle, the recipe is still delicious with just the cheese and egg. Ensure the onion cream is hot when assembling so it slightly warms the yolk.
