Blueberry Yogurt Clusters

- 1 cup vanilla Greek yogurt
- 0.25 cup chopped almonds
- 0.25 cup shaved coconut
- 1 cup semi-sweet chocolate chips
- 1 tbsp coconut oil

Line a baking sheet with parchment paper to prevent the clusters from sticking.

Place the blueberries, vanilla Greek yogurt, chopped almonds, and shaved coconut in a large bowl.

Stir the mixture gently until all ingredients are well combined and the blueberries are evenly coated.

Using a 1.5 tablespoon-size spring-loaded cookie scoop, scoop 16 clusters onto the prepared baking sheet.

Place the baking sheet in the freezer for 20 minutes to allow the clusters to firm up.

Place the semi-sweet chocolate chips and coconut oil in a microwave-safe bowl.

Microwave the chocolate mixture at 30-second intervals, stirring in between each interval, until the chocolate is completely melted and smooth.

Remove the clusters from the freezer. Use a fork to hold each blueberry yogurt cluster and dip it into the melted chocolate.

Allow any excess chocolate to drip off before transferring the clusters back to the parchment-lined baking sheet.

Allow the chocolate-covered clusters to set for 5 minutes.
Notes
