Ingredients
- 1 cup milk chocolate (Finely chopped)
- 1 cup heavy whipping cream
Steps
- 1
Place the finely chopped milk chocolate in a heatproof bowl.
- 2
Heat the heavy whipping cream until hot but not boiling. In a microwave, this takes about 1 minute, though the exact time will vary by appliance. Watch carefully so it does not boil over.
- 3
Pour the hot cream over the chopped chocolate. Let the mixture stand undisturbed for 1–2 minutes so the chocolate can soften.
- 4
Whisk the cream and chocolate together until all the chocolate has melted and the ganache is completely smooth and glossy.
- 5
Press plastic wrap directly onto the surface of the ganache to prevent a skin from forming.
- 6
Refrigerate the covered ganache overnight, until thoroughly chilled and firm.
- 7
The next day, use a hand mixer to whip the chilled ganache until it is light, fluffy, and spreadable. Stop mixing as soon as it reaches that texture.
Notes
Do not overwhip the ganache. If it begins to look grainy, it has been whipped too far. Use as a frosting or filling.
