- 8 oz cottage cheese (processed until smooth; half of a 16oz tub)
- 2 eggs
- 4 tbsp powdered monkfruit (or sweetener of choice; must be powdered)
- 3 tbsp cacao powder (use 2.5 tbsp for a less rich flavor)
- vanilla extract (small splash)
- sugar-free chocolate chips (a sprinkle; optional but highly recommended)

Place 8oz of cottage cheese into a small food processor and process until completely smooth to remove all curds.

Add 3 tablespoons of cacao powder to the mixture.
