Ingredients
- 3.5 Chicken Thighs (3-4 thighs)
- 1.5 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 tbsp Chili Powder
- 1 tbsp Smoked Paprika
- 1 tbsp Mexican Oregano
- Salt (to taste)
- Black Pepper (to taste)
- 5 Tomatillo
- 2 Serrano
- 0.5 Onion (for sauce)
- 4 cloves Garlic
- 1 Avocado
- 2 Lime Juice (juice of 2 limes)
- 0.5 bundle Cilantro (for sauce)
- 1 tsp Chicken Bouillon Powder
- 0.5 tbsp Garlic Powder (for sauce)
- 0.5 tbsp Onion Powder (for sauce)
- 0.25 cup Olive Oil
- 1.5 cup Water (1-2 cups)
- 10 Corn Tortilla
- 0.5 White Onion (finely diced for topping)
- 0.5 bundle Cilantro (finely chopped for topping)
- 16 oz Oaxaca Cheese (spelled Quaxa in source)
- Neutral Oil (for frying)
Steps
- 1
Prepare the chicken by seasoning the thighs with garlic powder, onion powder, chili powder, smoked paprika, Mexican oregano, salt, and black pepper.
- 2
Cook the chicken thighs until tender and fully cooked, then shred or finely chop the meat.
- 3
To make the sauce, combine tomatillos, serranos, onion, garlic, avocado, lime juice, cilantro, chicken bouillon, garlic powder, onion powder, olive oil, and water in a blender. Blend until smooth and season with salt to taste.
- 4
Prepare the toppings by finely dicing the remaining half onion and chopping the remaining cilantro bundle.
- 5
Heat a small amount of neutral oil in a skillet over medium heat. Place a corn tortilla in the pan, add a layer of shredded Oaxaca cheese and a portion of the seasoned chicken.
- 6
Fold the tortilla over to create a taco shape and fry on both sides until the cheese is melted and the tortilla is golden and crispy.
- 7
Serve the crispy tacos immediately topped with the fresh salsa, diced onion, and cilantro.
Notes
The source lists 'Quaxa Cheese', which is a misspelling of Oaxaca cheese. The preparation steps were inferred based on the ingredient list and the dish title as the full text was behind a paywall.
