- 1.5 lb Chicken breast (cooked and shredded or diced)
- 4 tbsp Butter (unsalted)
- 1 Onion (diced)
- 2 Carrots (diced)
- 2 Celery stalks (diced)
- 2 Bell peppers (diced)

- 0.33 cup All-purpose flour (for the filling)
- 2 cup Chicken broth
- 0.5 cup Heavy cream
- 1 tsp Smoked paprika
- Salt and pepper (to taste)
- 2 cup All-purpose flour (for the biscuits)
- 0.5 cup Cornmeal
- 1 tbsp Baking powder
- 0.5 cup Cold butter (cubed)
- 1 cup Gouda cheese (shredded)
- 4 oz Diced green chiles (canned)
- 1 cup Buttermilk

Preheat your oven to 400°F (200°C).

In a large oven-safe skillet or Dutch oven, melt 4 tablespoons of butter over medium heat.

Add the diced onion, carrots, celery, and bell peppers to the skillet. Sauté for 6-8 minutes until the vegetables begin to soften.

Stir in the minced garlic and cook for 1 minute until fragrant.

Sprinkle 1/3 cup of flour over the vegetables and stir constantly for 2 minutes to cook out the raw flour taste.

Notes
If you don't have buttermilk, you can make a quick substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes. For extra smokiness, you can add a dash of liquid smoke to the filling.
