Ingredients
- 2 steaks (use whatever steaks you wish)
- salt (for seasoning steak and sauce)
- black pepper (for seasoning steak and sauce)
- olive oil (for brushing steaks)
- butter (for basting steak)
- 2 garlic cloves (for basting steak)
- 1 brown onion (finely chopped)
- 2 garlic cloves (minced, for sauce)
- 150 g dried pasta
- 170 ml vegetable stock
- 80 ml single cream
- 0.5 tsp onion powder
- 0.5 tsp Italian seasoning
- 0.5 tsp oregano
- 40 g Parmesan (grated)
- fresh parsley (handful, chopped)
Steps
- 1
Season your steaks generously with salt and black pepper on both sides. Brush the steaks with a little olive oil.
- 2
Heat a pan over medium-high heat. Fry the steaks to your preferred liking. For a medium-rare finish, fry for 1 minute on each side, then add a knob of butter and 2 garlic cloves to the pan and baste the steaks for another 30 seconds on each side.
- 3
Remove the steaks from the pan and set them aside to rest.
- 4
In the same pan used for the steak, add the chopped brown onion. Cook until softened and translucent.
- 5
Add 2 minced garlic cloves to the pan with the onions and cook for another 1 minute until fragrant.
- 6
Pour in the vegetable stock and single cream. Bring the mixture to a simmer.
- 7
Add the seasoning to the sauce: 1/2 tsp each of salt, black pepper, onion powder, Italian seasoning, and oregano. Stir in the grated Parmesan cheese.
- 8
While the sauce simmers, cook the dried pasta in a separate pot of boiling salted water according to the package instructions.
- 9
A few minutes before the sauce is finished, stir in a handful of fresh chopped parsley.
- 10
Once the pasta is cooked, drain it and add it directly to the sauce pan. Turn off the heat and toss to coat the pasta thoroughly.
- 11
Slice the rested steak into strips. Serve the pasta topped with the sliced steak.
Notes
The author suggests basting the steak with butter and garlic for extra flavor. Ensure the steak rests for at least 5 minutes before slicing to keep it juicy.
