Ingredients

  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 1 tsp cinnamon (for the dough)
  • 0.33 cup milk (or half milk, half heavy cream)
  • 1 tsp vanilla extract (for the dough)
  • 1 tbsp butter (melted, for the dough)

  • 3 tbsp sugar
  • 1.5 tsp cinnamon (for coating)
  • 4 tbsp powdered sugar
  • 2 tsp heavy cream
  • 0.5 tsp vanilla extract (for glaze)
  • vanilla bean (or vanilla bean paste)

Steps

    Preheat oven to 375°F (190°C) and grease or line your baking pan or cast iron skillet.

    In a bowl, whisk together the flour, baking powder, salt, and 1 tsp of cinnamon.

    Warm the milk slightly, then mix in the vanilla and 1 tbsp of melted butter.

    Pour the wet ingredients into the dry ingredients and mix until a soft dough forms; stop as soon as it comes together and avoid overmixing to keep them pillowy.

    Lightly flour your surface, roll the dough into a log, flatten it slightly, and cut it into 20 even bites.

    Toss each piece in the remaining melted butter, then coat fully in the cinnamon sugar mixture (sugar and 1-2 tsp cinnamon).
