Ingredients

  • 200 g dry noodles (wheat noodles or egg noodles)
  • 2 tbsp cooking oil (divided)
  • 2 eggs (beaten)
  • 3 cloves garlic (minced)
  • 2 cups bok choy (chopped into bite-sized pieces)
  • 0.5 carrot (julienned)
  • 2 tbsp light soy sauce
  • 1 tsp dark soy sauce (for color)
  • 1 tbsp oyster sauce
  • 0.5 tsp sugar
  • 2 stalks green onions (chopped into 2-inch lengths)

Steps

    Bring a large pot of water to a boil. Add the noodles and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

    Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Pour in the beaten eggs and scramble until just set. Remove the eggs from the pan and set aside.

    In the same pan, add the remaining 1 tablespoon of oil. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add the julienned carrots and chopped bok choy to the pan. Stir-fry for 1-2 minutes until the vegetables begin to soften but remain crisp.

    Add the cooked noodles back into the pan with the vegetables.

    Season the noodles by adding the light soy sauce, dark soy sauce, oyster sauce, and sugar. Toss everything together thoroughly to ensure the noodles are evenly coated in the sauce.

    Add the cooked eggs and green onions back into the pan. Toss for another 1 minute until everything is heated through and well combined.

    Serve immediately while hot.

Notes

You can substitute the bok choy with cabbage or spinach depending on preference. For a spicy kick, add a teaspoon of chili oil or sriracha during the seasoning step.
