A quick, spicy, and creamy ground beef soup with tomatoes, mushrooms, and processed cheese. This hearty dinner is ready in about 20 minutes and is especially suitable for an uncomplicated weeknight meal.

Ingredients
- 1 Red onion (peeled and finely diced)
- 1 EL Sunflower oil
- 200 g Ground beef
- 400 g Chopped tomatoes (canned)
- 50 ml Cooking cream (15% fat)
- 170 g Mushrooms (canned and drained)
- 50 g Processed cheese
- Salt (to taste)
- Pepper (to taste)
Steps

Peel and finely dice the red onion.

Heat the sunflower oil in a pot over medium-high heat.

Add the diced onion to the pot and sauté for about 2 minutes, until softened and slightly translucent.

Add the ground beef and fry for about 3 minutes, breaking it up with a wooden spoon until browned all over.

Season the browned ground beef with salt and pepper.

Add the chopped tomatoes and cooking cream to the pot and stir well.

Simmer the soup for about 5 minutes so the flavors can combine and the soup can heat through.

Add the processed cheese and drained mushrooms.

Stir everything until the processed cheese has melted completely and the soup is creamy.

Taste the soup and add more salt and pepper if needed. Serve hot.
Notes
Additional ingredients such as corn, bell peppers, zucchini, peas, or fresh mushrooms can be added to taste. Fresh herbs make a suitable garnish; flatbread is also a good accompaniment for dipping.
