Ingredients

  • 1.5 lb boneless, skinless chicken thighs
  • 2.5 canned chipotles in adobo (finely chopped; use 1 to 4 peppers depending on heat preference)
  • 2 tbsp adobo sauce (from the chipotle can)
  • 3 tbsp honey
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp kosher salt (plus additional as needed)
  • 0.5 tsp ground cumin
  • 15 oz black beans (1 can, rinsed and drained)
  • 1 lime juice (from 1 lime)
  • 8 tortillas (warmed, for serving)
  • pickled onion (for serving)
  • 1 avocado (sliced or cubed, for serving)

    Combine the chicken thighs, chopped chipotles, 2 tablespoons of adobo sauce, honey, onion powder, garlic powder, 1 teaspoon salt, and cumin in an electric pressure cooker.

    Stir the ingredients well to ensure the chicken is evenly coated.

    Cover the pressure cooker and set the steam valve to the sealed position.

    Cook on high pressure for 13 minutes.

    Once the cooking cycle is complete, let the pressure release naturally for 5 minutes, then release the remaining pressure manually. Open the lid.

    Using tongs, remove the chicken to a bowl or cutting board and shred the meat with two forks.

    Optional: If you would like to reduce the sauce for a thicker consistency, set the pressure cooker to the sauté function and simmer the liquid for 5 minutes.

    Stir in the rinsed black beans and a squeeze of lime juice.

    Set the cooker to sauté and let the beans warm through for 2 to 3 minutes.

Notes

To make quick-pickled onions: Thinly slice a red onion and place in a heat-proof container. Boil 1.5 cups cider or white vinegar with 3 heaping spoonfuls of sugar and a pinch of salt. Pour the hot liquid over the onions and let cool. Heat adjustment: Chipotles vary in heat; use 1-2 for a milder dish or up to 4 for more spice.
