Ingredients
- 2 Boneless, skinless chicken breasts
- Salt (to taste)
- 1 tsp Black pepper
- 2 tsp Onion powder
- 2 tsp Garlic powder
- 1 tsp Smoked paprika
- 2 tsp Kickin chicken seasoning
- Cooking oil (for searing chicken)
- 16 oz Gnocchi
- 2 cups Half-and-half
- 4 cups Chicken stock
- 2 Carrots (large, diced)
- 2 stalks Celery (diced)
- 0.5 Onion (diced)
- 3 cloves Garlic (minced)
- 2 cups Spinach (roughly chopped)
- 0.25 cup All-purpose flour
- 2 tbsp Unsalted butter
- 1 tbsp Italian seasoning
- 1 tbsp Fresh thyme (leaves removed from stem)
- Crushed red pepper flakes (optional; for a little kick)
Steps
- 1
Season the chicken breasts with salt, black pepper, onion powder, garlic powder, smoked paprika, and Kickin chicken seasoning.
- 2
Heat cooking oil in a pot over medium-high heat. Sear the chicken for 3–4 minutes on each side, then remove it from the pot.
- 3
Add the unsalted butter to the pot. Add the carrots, celery, and onion, and sauté for a few minutes.
- 4
Add the garlic and fresh thyme. Season with the same seasonings used on the chicken, except for the smoked paprika.
- 5
Add the flour and sauté the vegetables for 1–2 minutes.
- 6
Add the Italian seasoning, then pour in the chicken stock. Bring the soup to a boil.
- 7
Return the chicken to the pot and cook for 10–15 minutes, until the chicken finishes cooking.
- 8
Add the half-and-half and allow the soup to come back to a boil.
- 9
Remove the chicken and shred it.
- 10
Return the shredded chicken to the pot. Add the gnocchi, spinach, and optional crushed red pepper flakes.
- 11
Reduce the heat to medium-low, cover the pot, and simmer for about 4 minutes, until the gnocchi is cooked.
Notes
The transcript does not specify how much cooking oil or crushed red pepper flakes to use. It recommends gnocchi from the refrigerated section; it also mentions homemade gnocchi as an option.
