Ingredients

  • 2 lb boneless, skinless chicken thighs (trimmed of excess fat)
  • 2 stalks celery (diced or sliced)
  • 1 onion (diced or sliced)
  • 2 carrots (diced or sliced)
  • 3 cloves garlic (minced)
  • 2 tbsp fresh parsley (chopped)
  • 1 packet Savory Herb seasoning packet (can substitute with garlic herb seasoning)
  • 0.5 packet Au Jus gravy mix
  • 0.5 packet Chicken Gravy mix
  • salt (to taste)
  • black pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp ground thyme
  • 4 tbsp unsalted butter (cut into pats)
  • 1 cup water
  • 4 large potatoes (partially peeled, for mashed potatoes)
  • 0.5 cup milk (divided, for mashed potatoes)
  • Kinder's Buttery Herb seasoning (for mashed potatoes)

Steps

    Prepare the vegetables by dicing or slicing the celery, onion, and carrots. Mince the garlic cloves.

    Place the boneless, skinless chicken thighs into the crockpot.

    Add the prepared celery, onion, carrots, and garlic to the crockpot along with the fresh parsley.

    Sprinkle the savory herb packet, half of the au jus packet, and half of the chicken gravy packet over the chicken and vegetables.

    Season the mixture with salt, pepper, garlic powder, onion powder, and ground thyme.

    Add the butter pats and pour in one cup of water.

    Give everything a nice mix to distribute the seasonings.

    Cover and cook on high for 3 hours, or on low for a longer period until the chicken is tender and falling apart.

    While the chicken cooks, prepare the mashed potatoes. Peel the potatoes partially (leaving some skin for texture) and cut into chunks.

    Place the potatoes into a pot of boiling salted water and cook until they are nice and soft.

    Drain the potatoes. Begin mashing by adding half of the butter and half of the milk.

    Add the remaining butter and milk, mashing until you reach your desired consistency (the author prefers them slightly chunky).

    Season the mashed potatoes with Kinder's Buttery Herb seasoning, salt, and pepper. Mix well.

    Once the chicken is done and tender, serve it over the mashed potatoes with the gravy from the pot. Pair with a side vegetable and a croissant if desired.

Notes

If you cannot find the savory herb packet, you can substitute it with a general garlic herb seasoning. The author recommends leaving some skin on the potatoes for texture.
