Ingredients

  • 1 ripe plantain (Peeled and cut into pieces; it should be ripe and sweet.)
  • 2 eggs (They can also be replaced with egg whites; use whole eggs or egg whites according to preference.)
  • 50 g ham (Sliced or chopped.)
  • 30 g cheese (Sliced, grated, or cut into pieces; choose a cheese that melts well.)
  • 30 g spinach (Fresh and washed.)
  • 1 tsp cooking oil (For lightly greasing the pan; optional if using a nonstick pan.)
  • salt (To taste; keep in mind that the ham and cheese already add salt.)

    Peel the ripe plantain and cut it into pieces. Place it in a bowl and mash it with a fork until you obtain a fairly smooth purée; a few small pieces may remain.

    Add the 2 eggs to the plantain purée. Beat until fully combined and season lightly with salt, if using.

    Heat an approximately 20 cm nonstick pan over medium-low heat and lightly grease it with the oil. The pan should be hot but not smoking, so the plantain does not burn before the egg sets.

    Pour the plantain and egg mixture into the pan. Carefully spread it into a round, even omelet.

    Cook for approximately 3 to 4 minutes, until the base is golden brown and the top begins to set. Keep the heat at medium-low to prevent the plantain from browning too quickly.

    Add the ham, cheese, and spinach over one half of the omelet, leaving a small border uncovered.

    Fold the empty half over the filling to close the omelet. Cook for 1 to 2 more minutes, until the cheese melts and the spinach softens.

    Flip the omelet with the help of a spatula if necessary and cook for 1 additional minute to lightly brown the other side and ensure that the egg is fully cooked.

Notes

The ham, cheese, and spinach filling is only a suggestion. You can replace it with other ingredients, such as cooked chicken, turkey, mushrooms, avocado, or sautéed vegetables.
