Creamy Shrimp Scampi Tortellini Bake

Ingredients
- 0.5 cup chicken stock
- 0.5 cup dry white wine (such as Pinot Grigio)
- 0.75 cup heavy cream
- 1 lemon juice (from one small lemon)
- 0.5 cup grated parmesan cheese (divided for the sauce)
- 0.5 tsp red pepper flakes
- garlic (minced, as much as desired)
- 24 oz cheese tortellini (fresh or refrigerated)
- 6 tbsp garlic and herb butter (such as Kerrygold)
- 2 lb jumbo shrimp (peeled and deveined)
- 1 tbsp olive oil (for seasoning shrimp)
- garlic butter seasoning (such as Heath Riles, to taste)
- 8 oz shredded mozzarella cheese
- 0.33 cup grated parmesan cheese (for the topping)
- 0.33 cup panko breadcrumbs

Preheat your oven to 375°F (190°C).

In a 9x13 inch deep-dish glass baking dish, combine 1/2 cup chicken stock, 1/2 cup dry white wine, 3/4 cup heavy cream, the juice of one small lemon, 1/2 cup grated parmesan cheese, 1/2 teaspoon red pepper flakes, and minced garlic to taste. Whisk everything together until well combined.

Add 24 ounces of cheese tortellini to the baking dish and mix until the pasta is evenly coated in the liquid.

Place 6 tablespoons of garlic and herb butter in the center of the dish.

Cover the dish tightly with foil and bake for 20 minutes.

While the pasta is baking, place 2 pounds of peeled and deveined jumbo shrimp in a bowl. Drizzle with a little olive oil and season with garlic butter seasoning (or your preferred seasoning). Toss to coat and let sit.

After 20 minutes, remove the dish from the oven and uncover. Add the seasoned shrimp to the dish, stirring them into the pasta and sauce.

Top the mixture with 8 ounces of shredded mozzarella cheese, 1/3 cup grated parmesan, and 1/3 cup panko breadcrumbs.

Return the dish to the oven, uncovered, and bake for an additional 20 minutes at 375°F (190°C) until the shrimp are cooked through and the topping is golden brown and bubbly.
Notes
The author recommends using a 9x13 Pyrex dish. For the butter, Kerrygold Garlic and Herb is suggested for extra flavor. While pre-shredded mozzarella was used in the video, shredding your own cheese usually results in a better melt.
