Lemon Dijon Instant Pot Shredded Chicken

Ingredients
- 1 lb chicken thighs
- salt and black pepper (To taste; use a light seasoning before cooking and a small additional amount after adding the liquid.)
- 1 tbsp Italian seasoning
- 2 tbsp Dijon mustard
- 1 lemon juice (Juice the lemon freshly.)
- 0.5 cup chicken stock

Season the chicken thighs on all sides with salt and pepper. Place the seasoned chicken in the Instant Pot.

Sprinkle the Italian seasoning over the chicken, then coat the thighs thoroughly with the Dijon mustard.

Add the freshly squeezed lemon juice to the pot.

Pour in the chicken stock. Add a small additional amount of salt and pepper to season the cooking liquid.

Secure the Instant Pot lid and cook on high pressure for 30 minutes. Allow the pressure to release naturally before opening the lid.

Notes
