Ingredients
- 4 cup cooked chicken (shredded or diced; rotisserie chicken works great)
- 2 cup Alfredo sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 1 cup shredded Parmesan cheese (divided)
- 1 cup frozen peas (optional)
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- salt (to taste)
- pepper (to taste)
- 1 bag frozen tater tots (32 oz or 900 g)
- 2 tbsp chopped parsley (optional, for garnish)
Steps
- 1
Preheat your oven to 375°F (190°C).
- 2
Grease a 9×13-inch baking dish with non-stick cooking spray.
- 3
In a large mixing bowl, combine the cooked chicken, Alfredo sauce, mozzarella cheese, half of the Parmesan cheese, peas (if using), garlic powder, onion powder, salt, and pepper.
- 4
Mix until everything is evenly coated.
- 5
Spread the chicken mixture evenly into the prepared baking dish.
- 6
Arrange the frozen tater tots in a single layer on top of the chicken mixture.
- 7
Sprinkle the remaining Parmesan cheese evenly over the tater tots.
- 8
Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and the casserole is bubbly.
- 9
Let the casserole cool for 5 minutes.
- 10
Garnish with chopped parsley, if desired, and serve hot.
Notes
For added flavor, mix in cooked bacon bits or sautéed mushrooms with the chicken mixture. Substitute peas with broccoli florets or omit the vegetables entirely for a simpler version. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 15–20 minutes or until heated through. You can freeze the unbaked casserole for up to 2 months; thaw overnight in the refrigerator before baking.
