Ingredients

  • 400 g Sushi rice (Thoroughly rinsed)
  • 480 ml Water (For cooking the rice)
  • 200 g Peeled shrimp
  • 1 Avocado (Flesh of 1 ripe avocado)
  • 6 Nori sheets
  • 150 g Cream cheese
  • 20 g Sriracha mayonnaise (Approximately 20 g)
  • 10 g Sesame seeds
  • Balsamic vinegar (A little, to taste)
  • Salt and pepper (To taste)
  • 20 ml Oil (For preparation or drizzling over the pizza)
  • 50 ml Rice vinegar (For the rice seasoning)
  • 1 tsp Erythritol (For the rice seasoning)
  • 1 tsp Salt (For the rice seasoning)
  • 2 tbsp Potato starch (For the tempura batter)
  • 100 ml Very cold water (For the tempura batter)
  • 1 Egg (For the tempura batter)
  • Salt and pepper (For the tempura batter, to taste)
  • Frying oil (Amount depends on the frying method)

Steps

  1. 1

Rinse the sushi rice thoroughly under cold water until the water running off is almost clear. Transfer it to a pot, add 480 ml of water, and cook according to the package instructions; the source states approximately 12 minutes of cooking.

  2. 2

After cooking, remove the rice from the heat and leave it covered for approximately 10 minutes so it can finish cooking and absorb the remaining moisture.

  3. 3

Mix the rice vinegar, erythritol, and 1 tsp of salt. Add the seasoning to the warm rice and mix gently without crushing the grains.

  4. 4

Prepare the tempura batter: mix the very cold water with the egg, then add the potato starch, salt, and pepper. Stir briefly, just until combined; a slightly lumpy batter is appropriate.

  5. 5

Coat the peeled shrimp in the tempura batter and fry them in hot oil until the coating is light, crisp, and golden, and the shrimp are fully cooked. Drain them on a paper towel.

  6. 6

Line a baking dish or tray with the nori sheets. Spread the cooked, seasoned rice over them, creating an even layer.

  7. 7

Add the cream cheese, sliced avocado, and fried tempura shrimp. Drizzle everything with approximately 20 ml of oil and a little balsamic vinegar, then season with salt and pepper.

  8. 8

Bake at 190°C for approximately 20 minutes, until the top is hot and the edges are lightly browned.

  9. 9

After baking, drizzle the pizza with sriracha mayonnaise and sprinkle with sesame seeds. Cut it into 6 pieces and serve warm.
