Sticky Garlic Soy Chicken with Lo Mein

Ingredients
- 1 lb Chicken breast or thighs (cut into 1-inch pieces)
- 0.5 cup Cornstarch (for coating)
- 2 tbsp Vegetable oil (plus more if needed for sauce)
- 400 g Egg noodles (or Lo Mein noodles)
- 0.5 cup Soy sauce (pork-free)
- 2 tbsp Brown sugar
- 2 tbsp Rice vinegar
- 1 tbsp Sesame oil
- 1 tbsp Ginger (minced)
- 4 Garlic (cloves, minced)
- Green onions (chopped, for garnish)

Toss the chicken pieces in cornstarch until they are evenly coated.

Heat 2 tablespoons of vegetable oil in a large pan over medium-high heat.

Fry the chicken in the hot oil until golden and crispy. Remove the chicken from the pan and set aside.

Boil the egg noodles according to the package instructions. Drain and set aside.

In the same pan used for the chicken, add a touch more oil if needed. Sauté the minced garlic and ginger for 30 seconds until fragrant.

Whisk in the soy sauce, brown sugar, rice vinegar, and sesame oil.

Add the crispy chicken and cooked noodles back into the pan.
