Weights are estimates. Together, the ingredients weigh about 1.91 kg before cooking, which is about 475 g per serving.

Steps

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 2-3 tablespoons of pasta water before draining.

  2. Drizzle the thin-sliced chicken breasts with 1 tablespoon of olive oil and season evenly with 1/2 packet of ranch seasoning.

  3. In a skillet over medium-high heat, sear the chicken for 2 to 3 minutes per side until golden brown and cooked through. Remove from the pan, let rest, and then dice into bite-sized pieces.

  4. Cook the bacon in a skillet until crispy. Drain on paper towels and chop into bits.

  5. In a large saucepan or pot, melt 1 stick of butter over medium heat. Add the minced garlic and cook until fragrant.

  6. Whisk in 1/3 cup of flour to create a roux. Cook for 1-2 minutes to remove the raw flour taste.

  7. Slowly whisk in 1/3 cup of milk, 1 1/2 cups of heavy cream, and the remaining 1/2 packet of ranch seasoning. Continue whisking until the sauce is thickened and smooth.

  8. Add the reserved pasta water, shredded cheddar, and shredded mozzarella to the sauce. Whisk until the cheese is completely melted and the sauce is smooth.

  9. Combine the cooked pasta, diced chicken, and bacon bits into the cheese sauce. Stir until everything is well coated.

  10. Transfer the mixture to a baking dish. You can serve it immediately or top with extra cheese and bake until bubbly and golden.

Notes

You can eat the mac and cheese immediately after combining or throw it in the oven with extra cheese for a baked finish.
