- 1 tsp dried oregano (For the potatoes)
- 1 tsp ground black pepper (For the potatoes)
- 1 tsp paprika (For the potatoes)

Steps
- 1
Prepare the chimichurri by placing the chopped parsley, cilantro, onion, minced garlic, and red bell pepper in a bowl.
- 2
Add the paprika, cumin, organic sugar, salt, oregano, pepper, and optional chili pepper.
- 3
Add the apple cider vinegar and olive oil. Mix all the ingredients well.
- 4
Cover the bowl and let the chimichurri rest in the refrigerator for at least 1 hour. For a more intense flavor, let it rest overnight.
- 5
Cut the five potatoes into wedges and cook them in water for 10 minutes.
- 6
Drain the water and transfer the potatoes to a bowl.
- 7
Add the 2 tbsp of olive oil, oregano, pepper, and paprika to the potatoes. Mix well to coat them with the seasonings.
- 8
Preheat the air fryer to 170 °C.
- 9
Place the seasoned potatoes in the air fryer and cook them at 170 °C for 20 minutes. Shake them halfway through the cooking time.
- 10
Serve the potatoes with the chimichurri. The sauce can also be served with arepas, patacones, and grilled meats.
Notes
The publication does not specify how much water to use to cook the potatoes. The total time includes at least 1 hour of resting time for the chimichurri; it can be left overnight for more flavor.
