- 2 garlic cloves
- 100 g sun-dried tomatoes (strips in oil, drained)
- 180 g red capsicum (cut into pieces)
- 0.5 tsp sea salt
- 0.5 tsp ground black pepper
- 500 g skinless chicken thigh fillets (or breast, cut into 2-3 cm pieces)
- 250 g pouring cream (whipping cream)
- 400 g water
- 0.75 tsp paprika
- 1 tsp dried Italian herbs
- 1 tbsp Vegetable stock paste
- 300 g dried fusilli pasta (or small dried pasta)
- 120 g fresh baby spinach leaves
- ground black pepper (to serve)
- dried chilli flakes (optional, to serve)
- 3 sprigs fresh flat-leaf parsley (leaves only, chopped, to garnish)
Steps
- 1
Place Parmesan cheese into the mixing bowl and grate 10 sec/speed 10. Transfer to a bowl and set aside.
- 2
Place garlic, sun-dried tomatoes, and red capsicum into the mixing bowl and chop 5 sec/speed 5.
- 3
Scrape down the sides of the mixing bowl with the spatula. Add sea salt, black pepper, and chicken thigh pieces, then sauté 5 min/120°C/reverse/speed soft.
- 4
Add pouring cream, water, paprika, dried Italian herbs, and vegetable stock paste, then cook 5 min/100°C/reverse/speed soft.
- 5
Add dried fusilli pasta and cook for the time indicated on the pasta package/100°C/reverse/speed soft, or until pasta is al dente.
- 6
Add baby spinach and reserved grated Parmesan cheese. Mix well using the spatula until the spinach has wilted.
- 7
Divide the pasta among four bowls. Garnish with chopped parsley, extra ground black pepper, and dried chilli flakes (if using) before serving.
Notes
For best results, use a high-quality vegetable stock paste. You can substitute chicken breast for thigh fillets, though thighs remain more tender during the Thermomix cooking process.
