Ingredients
- 0.25 cup Red chilli flakes
- 1 tsp Light soy sauce
- 1 tsp Powdered sugar
- 1 cup Neutral-flavored oil (Vegetable oil or refined oil works well.)
- 6 Garlic cloves (Chopped.)
- 1 inch Cinnamon stick
- 1 Star anise (Remove before bottling.)
Steps
- 1
Place the red chilli flakes, light soy sauce, and powdered sugar in a heatproof bowl. Give the mixture a light stir.
- 2
Pour the neutral-flavored oil into a saucepan and place it over heat until hot.
- 3
While the oil heats, chop 6–8 garlic cloves.
- 4
Add the cinnamon stick, star anise, and chopped garlic to the hot oil.
- 5
Cook over a very low flame until the garlic is crisp and golden brown.
- 6
Carefully pour the hot garlic-infused oil into the chilli mixture in the heatproof bowl.
- 7
Stir the chilli oil and let it come to room temperature. The chilli flakes should become crisp and the flavors should come together.
- 8
Once cooled, remove the cinnamon stick and star anise.
- 9
Transfer the chilli oil to an airtight glass container and seal it.
Notes
The source says the finished chilli oil does not spoil for months, but it does not provide specific storage conditions. Store in a clean, airtight glass container and follow appropriate food-safety practices. The source does not specify an exact oil temperature or frying time; use the stated visual cue of crisp, golden-brown garlic and take care when pouring hot oil.
