Ingredients
- 0.5 cup Plain yogurt (unsweetened)
- 0.5 cup Sour cream (Sour cream)
- 2 tbsp Sriracha sauce (or any other hot sauce)
- 0.5 tsp Minced garlic (fresh)
- 0.5 Lime (juice)
- Salt (to taste for the dressing)
- 1 Chicken breast (diced)
- 1 tsp Garlic powder (for the chicken)
- 1 tsp Paprika (sweet paprika)
- Salt and pepper (to taste for seasoning the chicken)
- 0.5 cup Black beans (cooked and drained)
- 0.5 cup Cherry tomatoes (halved)
- 2 tbsp Red onion (finely chopped)
- 0.25 cup Sweet corn (kernels, cooked)
- 0.25 cup Shredded cheese (cheddar or Mexican blend)
- 1 cup Lettuce (chopped)
- 1 Corn tortilla (cut into strips or pieces)
Steps
- 1
In a small bowl, mix the plain yogurt, sour cream, sriracha sauce, minced garlic, the juice of half a lime, and a pinch of salt. If the consistency is too thick, add a little water until you reach the desired texture for the dressing.
- 2
Season the chicken breast with garlic powder, paprika, and salt and pepper to taste.
- 3
Cook the chicken in a skillet over medium-high heat until well-browned and fully cooked. Remove from heat and let cool slightly.
- 4
Begin assembling the jar by first placing a generous layer of the prepared dressing at the bottom.
- 5
Add the black beans on top of the dressing.
- 6
Add the cherry tomatoes, followed by the finely chopped red onion and the sweet corn.
- 7
Add the cooked chicken and then a layer of shredded cheese.
- 8
Finish filling the jar with the chopped lettuce and the corn tortilla pieces on top.
- 9
Close the jar and refrigerate until ready to consume. When serving, shake well or pour into a plate to mix all ingredients with the dressing.
Notes
To prevent the tortilla from getting soggy, you can store it separately and add it just before eating. The order of the layers is crucial: the wettest ingredients and the dressing go at the bottom, while the lettuce and crunchy items go at the top.
