Thai-Style Salad (Meal Prep)

- 3 tbsp peanut butter (peanut butter)
- 3 tbsp chili oil (chili oil)
- 3 tbsp soy sauce
- 3 tbsp rice vinegar
- 1.5 lemon juice (the juice of one and a half lemons)
- 3 firm plain tofu (3 blocks (or shrimp, chicken...))
- 3 rice noodles (portions)
- edamame (shelled)
- 1 carrot (grated or julienned)
- 0.5 cucumber (diced)
- fresh cilantro (chopped)
- fresh mint (chopped)
- peanuts (crushed)

Prepare the dressing by mixing the peanut butter, chili oil, soy sauce, rice vinegar, and lemon juice in a bowl until you reach a smooth consistency.

If using jars for meal prep, distribute the dressing at the bottom of each jar.

Prepare the rice noodles according to the package instructions, then rinse them with cold water to stop the cooking.

Cut the firm tofu into cubes (or prepare your alternative protein like grilled chicken or shrimp).

Add the chosen protein (tofu) on top of the sauce in the jars.

Then add the rice noodles, followed by the chosen vegetables: edamame, grated carrots, and diced cucumber.

Finish by adding the toppings: fresh cilantro, mint, and crushed peanuts.

Close the jars and keep refrigerated. Mix well just before enjoying.
Notes
